Fresh cheese is made from fresh curds that have not been pressed or aged, making it young, pure, and deliciously creamy. Many of the most beloved types fall under the fresh cheese family, and they’re great for bulking up a meal if you don’t eat meat too. Here are five cheesy recipe recommendations for you to enjoy.
Spinach and ricotta lasagne
Lasagne is one of the most comforting pasta dishes thanks to the sumptuous beef ragù and creamy béchamel sauce, and this vegetarian-friendly version is just as decadent.

However, this version from the Philippines would undoubtedly stand out in a line-up thanks to its vibrant purple colour, which comes from the addition of ‘ube’ (purple yam with milk, sugar, and butter).
Like a typical cheesecake, it sits on a biscuit base and is filled with cream cheese and double cream. This recipe is for six mini cheesecakes but you could always adjust the quantities and create one large one instead.
